# Fats
- Are a type of **lipids**
- Organic molecules made of carbon, hydrogen and oxygen
- **Not fixed** proportions, contain less O:H ratio
- Made of **1 glycerol + 3 fatty acid molecules** combined via **condensation reaction**
- Can be broken down by **hydrolysis**
- Can be tested for with Ethanol Emulsion Test

## Functions
- A source of **store of energy**
- **Insulating layer**
- **Cushions and protects** vital organs

## Saturated Fats
- Is in a straight line
- Mostly solid state at room temperature

## Unsaturated Fats
- Has Kink or is bent
- Liquid in room temperature
- Contains $\ce{C=C}$ bond
