# QED Recipe Book: Spaghetti all'Amatriciana
#### Ingredients (4 people)
- Guanciale di Amatrice, 150g (or [this](https://i.imgur.com/CzO5IX0.png) from TJ's)
- Pomodori pelati, 400g ([these](https://i.imgur.com/Y1YklOs.png) from TJ's)
- Red pepper, 1 (powdered is also good)
- Salt (for the water and sauce)
- Extravirgin olive oil (for the sauce, [this](https://i.imgur.com/meloUVL.png) from TJ's)
- White wine, 50g
- Spaghetti, 320g (I recommend [these](https://www.sfoglini.com/products/spaghetti) but others are good too; look for "grano duro" at TJ's)
- Pecorino cheese, 75g ([this](https://i.imgur.com/0K3DtLY.jpg) at TJ's, Parmigiano Reggiano also good)
#### Preparation

While the water is boiling (salt added to the water at the end), remove the skin from the guanciale (1), cut in slices (2), and then stripes.

Then the oil in a pan with the red pepper and the guanciale (4, 5); cook for about 7 minutes until the fat part becomes transparent. Don't burn anything, gentle fire! At the end, add the white wine, turn the fire a bit up and let the wine evaporate.

Set aside the guanciale but leave the oil and grease (7), put the tomatoes in the pan (8, but no need to do it with your hands, use a tool), cook for about 10 minutes. Meanwhile, add 1/1.5 teaspoon of salt to the boiling water and put the spaghetti in (they should cook for 8-10 minutes, no way to know for sure other than tasting some).

When the spaghetti are ready, you can drain them and mix them with the sauce. Then add cheese!
#### Variants
- You can add some red onion at the beginning with the red pepper.
- You can use any vegetable instead of the guanciale to make other kinds of pasta.
