Don't burn anything, gentle fire! At the end, add the white wine, turn the fire a bit up and let the wine evaporate. ![](https://i.imgur.com/wo9gfyJ.png) Set aside the guanciale but leave the oil and grease (7), put the tomatoes in the pan (8, but no need to do it with your hands, use a tool), cook for about 10 minutes. Meanwhile, add 1/1.5 teaspoon of salt to the boiling water and put the spaghetti in (they should cook for 8-10 minutes, no way to know for sure other than tasting some). ![](https://i.imgur.com/G4mmn5v.png) When the spaghetti are ready, you can drain them and mix them with the sauce. Then add cheese! #### Variants - You can add some red onion at the beginning with the red pepper. - You can use any vegetable instead of the guanciale to make other kinds of pasta.
