Cookie rises quite a bit for the first two batches and doesnt spread as much, so ended up manually squishing the cookie down. Can consider modifying the steps to make the cookie spread during baking. Maybe also consider chilling the batter to make the bakes consistent. ## Instructions 1. Preheat oven to 200<sup>o</sup>C. 2. Sift the self-raising flour, plain flour and salt in a mixing bowl. 3. Brown the butter on a pan and let it cool for a bit before mixing in the espresso powder. 4. Add the brown sugar, caster sugar and vanilla essence to the browned butter and mix well. 5. Ensure the butter is cooled sufficiently before adding the eggs and mix until well combined. 6. Pour the butter mixture into the dry ingredients and mix well. 7. Chop the chocolate bar into big chunks. 8. Portion out the cookie dough into 30g balls and place them spaced apart on the baking tray. Press in a piece of chocolate on the top. 9. Bake for 6-7 min until slightly golden. 10.
