--- tags: recipes title: Glass noodles with vegetables --- # Glass noodles with vegetables ## Ingredients (per person) - Vegetable oil - Soy sauce - 50g/75g of glass noodles - 1 carrot (10~20g) - 1 Pleurotus eryngii fresh (~10g) - 1/16 of cabbage (~20g) - 2 spring onions (~20g) - 1/2 zucchini (10~30g) about 4cm thick. ## Prepare the vegetables 1. make the carrot in 3~4mm by 4cm sticks or slices 2. shred the cabbage at 3~4mm 3. make slices of the pleurotus, again 3~4mm 4. make round slices of the green part of the onions, 3mm 5. make vertical slices of the white part (bulb) of the onion, 4mm 6. Use a spiralizer to make strings of zucchini ## Cooking the vegetables 1. put enough vegetable oil to coat the base of the Wok (about 2 spoons) 3. on medium heat put the vertical slices of onion 4. after 1-2 minutes add the carrots and the cabbage 5. keep stirring for 4 minutes on high heat 6. pour the carrots+cabbage+onion in a bowl 7. add another spoon of oil if needed 8. add the mushrooms and stir them for 3 min in medium/high heat 9. pour the mushrooms in another bowl 10. add the zucchini strings and half of the green onion 11. add another spoon of oil 12. stir on medium-high heat for 3 minutes 13. pour in yet another bowl ## Cooking the noodles 1. prepare enough boiling water to cover the noodles in a separate pot 2. pour the water on the noodles or put the noodles in the boiling water 3. let it boil for 2 minutes if the noodles' cooking time is 5 minutes ## Put everything together 1. on high heat pour the carrot and cabbage and the zucchini 2. add 3 spoons of soy sauce and stir and mix 3. add the noodles and the mushrooms 4. add the remaining onions 5. add other 2 spoons of soy sauce and keep stirring for other 2-3 minutes
