--- tags: recipes title: Pumpkin + Bacon risotto --- # Pumpkin + Bacon risotto ## Ingredients (per person) - 1/4 onion - 50/80g of rice - 25/50g of bacon - 80g of pumpkin - pepper, salt, oil - 5g of butter - water or some kind of chicken stock ## Prepare the pumkin + bacon 1. dice the pumpkin ~1cm 2. dice the bacon if not pre-diced 0.5cm 3. put the bacon in the pan and let it cook at low heat till the fat starts rendering 4. Add the pumpkin and turn the heat up 5. Once all the diced pumpkin are roasted keep it aside ## ## Prepare the rice 1. thinly slice the onions 2. in a tall pan put enough oil to cover the bottom 3. cook the onions at medium heat until they start getting some color 4. add the rice and turn the heat up 5. keep stirring the rice for 5 min so it looks shiny 6. pour the broth till it covers the rice and turn the heat lower 7. keep adding broth/water as it gets absorbed for the next 10 minutes 8. add the pumkin + bacon and stir 9. keep adding broth/water as it gets absorbed for other 10~15min 10. Off heat, add the butter and keep stirring Serve warm
