# Paneer Breakfast Burrito ### Makes 12 Burritos #### Ingredients | Ingredient | Calories | Protein (g) | | ---------------------------------- | -------- | ----------- | | 12 Loven Fresh Protein Wraps | 1440 | 144 | | 2 cans Black Beans | 770 | 49 | | 18 oz Paneer | 1700 | 120 | | 9 Baby Potatoes | 240 | 3 | | 4 Tbsp Avocado Oil | 440 | 0 | | 2 Bell Peppers (cut into strips) | ? | 0 | | 0.5 lb Sliced Mushrooms | ? | ? | | 0.5 lb Baby Spinach | 0 | 0 | | 2 tsp Turmeric | 0 | 0 | | 2 tsp Cumin Seeds | 0 | 0 | | Hot Sauce | 0 | 0 | | 1.5 Medium Onions | 0 | 0 | | Curry Powder (to taste) | 0 | 0 | | Mint Chutney | ? | 0 | #### Per Serving (2 Burritos) | Ingredient | Calories | Protein (g) | | -------------- | -------- | ----------- | | Protein Wraps | 240 | 24 | | Black Beans | 130 | 8 | | Paneer | 300 | 20 | | Potatoes | 50 | 0 | | Oil | 60 | 0 | | **Total** | 780 | 56 | --- ### Method 1. **Roast the Potatoes** - Preheat oven to 375°F (190°C). - Slice the baby potatoes into wedges or slices. - Lightly spray with oil, season with salt and pepper. - Bake until crispy, around 25–30 minutes. 2. **Prepare Paneer Scramble** - Heat 2 Tbsp of oil in a pan. - Once hot, add cumin seeds and let them sizzle - Add diced onions and turmeric, sauté until translucent. - Crumble or dice paneer into small pieces. - Add paneer to the onions, season with salt and curry powder to taste. - Cook for 5 minutes, then add spinach (season with salt). - Cook until the paneer is heated through and has a scrambled texture. 3. **Cook Fajita Veggies** - Heat 1 Tbsp of oil in a pan. - Add mushrooms, season with salt and pepper. - Once the mushrooms are halfway cooked, add bell peppers. - Cook until tender, seasoning as needed. 4. **Prepare the Beans** - Rinse canned black beans. - Heat up a pot and add the beans. - Stir in hot sauce (or mole sauce) and a bit of water. - Cook until the beans are heated through. 5. **Assemble the Burritos** - Heat tortillas on both sides for about 30 seconds. - Add paneer scramble, beans, roasted potatoes, and fajita veggies. - Top with mint chutney. - Pro tip: Add a lot of chutney ;) - Roll up the tortillas into burritos and enjoy! ## Figures 1.
