### Method
1. **Roast the Potatoes**
- Preheat oven to 375°F (190°C).
- Slice the baby potatoes into wedges or slices.
- Lightly spray with oil, season with salt and pepper.
- Bake until crispy, around 25–30 minutes.
2. **Prepare Paneer Scramble**
- Heat 2 Tbsp of oil in a pan.
- Once hot, add cumin seeds and let them sizzle
- Add diced onions and turmeric, sauté until translucent.
- Crumble or dice paneer into small pieces.
- Add paneer to the onions, season with salt and curry powder to taste.
- Cook for 5 minutes, then add spinach (season with salt).
- Cook until the paneer is heated through and has a scrambled texture.
3. **Cook Fajita Veggies**
- Heat 1 Tbsp of oil in a pan.
- Add mushrooms, season with salt and pepper.
- Once the mushrooms are halfway cooked, add bell peppers.
- Cook until tender, seasoning as needed.
4. **Prepare the Beans**
- Rinse canned black beans.
- Heat up a pot and add the beans.
- Stir in hot sauce (or mole sauce) and a bit of water.
- Cook until the beans are heated through.
5. **Assemble the Burritos**
- Heat tortillas on both sides for about 30 seconds.
- Add paneer scramble, beans, roasted potatoes, and fajita veggies.
- Top with mint chutney.
- Pro tip: Add a lot of chutney ;)
- Roll up the tortillas into burritos and enjoy!
