Savory Mustard Chicken Hearty, one-pan dish to make it seem like you cook French cuisine **Ingredients** * .5 lbs of chicken thighs * 3x Carrots * 1x medium sized Yellow Onion * 2x Celery Stalk * Hot Hungarian Paprika * Olive Oil * Apple cider vinegar * Spicy Brown Mustard * Salt * Garlic **Utensils** * Knife * Cutting Board * Oven * Medium-sized, oven-safe pan * Plates, forks, knives **Instructions** 1) Take chicken out to rest at room temperature for 30 minutes;season chicken in salt and hot hungarian paprika 2) Pre-heat oven to 375 3) Chop garlic, place garlic in bottom of the pan with olive oil 4) Chop vegetables and add to the medium-sized, oven-safe pan 5) Coat vegetables with a liberal amount of spicy brown mustard 6) Coat chicken with a liberal amount of spicy brown mustard, rest on top of vegetables in a pan 7) Leave in the oven, stirring chicken and vegetables around every 10-15 minutes until it's cooked ### 2. Quick Pickles Good side dish to bring to parties that have lots of savory treats. **Ingredients** * 1x large Cucumber * 1/4th of an Onion * Lots of Rice Wine Vinegar * Crushed Red Pepper * Sugar **Utensils** * Knife * Cutting Board * Bowl **Instructions** 1. Chop cucumbers incredibly thin; unless you're a good chopper, this will take a long time 2. Chop onions in a similarly thin fashion 3. Add onion and cucumber to a bowl 4. Pour enough rice wine vinegar in so that all cucumbers are covered 5. Sprinkle some sugar and crushed red pepper 6. Stir everything together 7. Place in refrigerator for 1+ hours ### 3. Chimmichurri Sauce This sauce is great for everything. Serve with steak, bread, or anything. This sauce is awesome. **Ingredients** * One bunch of Cilantro * One bunch of Parsely * A bunch of Garlic * A bunch of Olive Oil * A bunch of Balsamic or Red Wine Binegar (pick one, not both) **Utensils** * Knife * Cutting Board * Blender * Bowl **Instructions** 1. Chop up Cilantro very fine 2. Chop up Parsely very fine 3. Chop up Garlic very fine 4. Add herbs to blender 5. Pour in a liberal amount of olive oil 6. Pour in less vinegar 7. Blend until it's the quality of a paste 8. Pour into a bowl and refrigerate for 1+ hours ### 4. Fancy Crispy Roasted Potatoes These are the best potatoes, but are extremely involved and take forever. **Ingredients** * 5x large Russet Potatoes * Cutting Board * Olive Oil * Garlic * Salt * Baking Soda * Water **Utensils** * Potato Peeler * Knife * Cutting Board * Pot * Calendar/Strainer * Large Bwl * Wooden spoon * 2x or 3x large Baking sheets **Instructions** * Boil water * Peel potatoes * Chop potatoes into large chunks * Pre-heat oven to 500 degrees * Add a fair amount of Baking Soda to the boiling water (this dries out the potatoes so they can be ultra-crispy) * Boil the potatoes for a little bit until they are a little bit tender * Strain potatoes * Shake potatoes around in a bowl so that they gain a little bit of a texture * Thin coating of olive oil in the baking sheets * Place potatoes so they aren't touching each other very much (more surface area = more crispiness) * Broil in oven for 25 minutes; shake potatoes around * Broil for another 20-25 minutes until crispy * Coat w/ salt ***Bonus*** *to confit, use Yukon Gold Potatoes and cook in a small layer of duck fat for 1 hour, turning every 15 minutes* ### 5. Potato, Leek, and Bacon Soup This is a good soup for cold days. The bacon is optional, it makes it a little heartier and smokier. > Note: bacon is optional **Ingredients** * 3x Large Leeks * 1x Stalk of Celery * 3x Medium-sized Carrots * 8x Yukon Gold Potatoes * 1/2 stick of Butter * .25 lb of bacon * Olive oil * Chicken Stock * Rice wine vinegar **Utensils** * Cutting Board * Knife * Instant Pot (optional) or regular pot * Blender * Bowls * Spoons * Skillet **Instructions** 1. Chop up vegetables (separate potatoes and other vegetables) 2. Chop up Bacon 3. Put Bacon in skillet on medium-high heat 4. Throw in vegetables (minus potatoes) as bacon is getting a little browned, turn up to high heat for a little bit 5. Dump the skillet items into the instant pot (or other pot), also add potatoes, butter, chicken stock, a little bit of rice wine vinegar 6. Cook on the soup setting (or boil in a pot) 7. Once potatoes are kind of mushy, blend everything together 8. Serve in bowls w/ spoons ### 6. Wilson's Stuffing **Ingredients** * Hard Bread * Spicy Italian Sausage * Celery * Carrots * Sage * Rosemary * Chicken Stock * Chicken Broth **Utensils** * Pot * Knife * Cutting Board * Skillet/Cast Iron * Baking Dish * Oven * Aluminum Foil **Instructions** 1. Cook sausage in skillet until crispy & set aside. 2. In the same pan, cook celery and carrots on low heat until soft. 3. Add sausage, vegetables, chicken stock, bread, and associated spices into baking dish. 4. Cover baking dish in aluminum foil. 5. Cook for 20 minutes @ 350 degrees 6. Remove foil and cook for 15 minutes until crispy. ### 7. Spicy Sopa Fideo Adjacent **Ingredients** * Bacon * Olive Oil * Chicken Stock * Onion * Carrot * Diced Hatch Green Chiles * Jalapenos * Ketchup * Angel Hair Noodles * Garlic Powder * Chile Powder * Rice Wine Vinegar **Utensils** * Cutting Board * Knife * Pot * Strainer **Instructions** 1. Chop bacon into small pieces, add to pot w/ a smidge of olive oil, heat up on low 2. Chop onions and jalapenos, throw them into the pot w/ the bacon, turn heat up to medium 3. Add a liberal amount of chile powder 4. Add two lil can's of diced hatch green chiles 5. Add half a thing of chicken broth and a few squirts of ketchup. If you can get Whataburger Spicy Ketchup, I recommend that; turn heat up to high 6. Cook it down a couple times, adding a little bit of water each time. 7. When it looks tasty, add water one more time and add half a bag of pasta 8. Take off heat and eat it ## Drink Recipes ### 1. Manhattan Special (c/o Jeff Stone) **Ingredients** * 2 oz bulleit rye whiskey * 1 oz wet vermouth * 1 oz dry vermouth * Maraschino cherry * Bitters * Ice **Utensils** * Cup * Stirrer **Instructions** 1. Pour whiskey & vermouths into cup 2. Drop cherry in 3. Add 2-3 dashes of bitters 4. Stir ## 2. Famous [x] Lime Punch **Ingredients** * 2.5L of Titos Vodka (alternative option is to use 1.75 of vodka and .75 of aperol/luxardo/etc.) * ~25 limes * 12 pack of sparkling beverage of your choice (cherry/dark cherry/sweeter flavors work well) * Fruit (optional) * Ice **Utensils** * Big vessel to contain and distribute liquid * Knife & Cutting Board * Lime Squeezer * Container to hold lime juice **Instructions** * Juice all limes * Pour everything into your big vessel * Serve with ice
