Preheat oven to 400°F. Grease muffin tin. First bowl (dry ingredients): 5 oz Flour 5 oz Farina (cream of wheat, malt-o-meal, or similar) 1 Tbsp Baking powder Whisk together. Second bowl (wet ingredients): 1⁄2 cup Sugar 1 egg 1 cup Whipping cream (not whipped) 1 tsp Salt 1 tsp Vanilla Beat together. Add dry ingredients and stir until just mixed. Dish into muffin tin. Bake until done (about 20 minutes). I watch and smell rather than time, usually. Mine turned a dark brown and started to smell right. Most recipes suggest around 20 minutes, or until a toothpick inserted in the center comes out clean. This is a quick bread, so barely mixing the batter is the rule, but mine came out very tender despite some over-mixing. My brother had given me some farina that didn't make it through the sieve after milling it for his excellent pizza. I've loved Malt-o-Meal Magic Muffins since I was a kid, but we were out of milk, so I improvised, substituting heavy cream for milk and oil.
