Ingredients:
- [ ] 1 medium-sized pumpkin or squash, peeled and diced
- [ ] 1 large potato, peeled and diced
- [ ] 1 large onion, diced
- [ ] 1 large carrot, diced

- [ ] 1 small turnip, peeled and diced
- [ ] 2 stalks celery, diced
- [ ] 1 pound beef chuck, cut into small pieces
- [ ] 1 pound beef bones
- [ ] 4 cups water
- [ ] 1 cup beef broth
- [ ] 1 tablespoon tomato paste
- [ ] 1 teaspoon dried thyme
- [ ] 1 bay leaf
- [ ] 1 Scotch bonnet pepper, optional
- [ ] Salt and pepper to taste
- [ ] Chopped fresh parsley for garnish
## Instructions:
* In a large pot, combine the beef chuck and bones with the water and bring to a boil. Reduce the heat to medium and simmer for 1 hour.
* Strain the broth into a clean pot, discarding the beef and bones. Add the pumpkin, potato, onion, carrot, garlic, turnip, celery, beef broth, tomato paste, thyme, bay leaf, and Scotch bonnet pepper (if using). Bring to a boil, then reduce the heat to low and simmer for 45 minutes, or until the vegetables are tender.
* Remove the bay leaf and Scotch bonnet pepper (if using). Use an immersion blender to purée the soup until smooth. Alternatively, you can transfer the soup to a blender or food processor and purée until smooth, working in batches if necessary.
* Return the soup to the pot and season with salt and pepper to taste. Bring the soup to a simmer and cook for an additional 10 minutes to allow the flavors to meld.
* Garnish with chopped fresh parsley and serve hot.
